Smoked Traeger Grill Salmon

(Prep time: 6 Minutes|Cook Time: 4 Hours| Servings: 3-4)

Ingredients

2 to 3 large salmon filets

For the brine

4 cups of water

1 cup of brown sugar

1/3 cup of kosher salt

For the Seasoning

The Zest of 1 large lemon

1 Pinch of freshly ground pepper

Instructions

Make sure the fish is thawed; then remove the pin bones with clean tweezers.

Combine the ingredients for the brine until the sugar is completely dissolved, and place into a large ziplock baggie or large covered container.

Place the cleaned, thawed salmon in the brine, and refrigerate for about 16 hours.

Remove the salmon from the brine and pat dry with clean paper towels; then let sit uncovered in the refrigerator for about 2 to 4 hours

Season the salmon with the pepper and the lemon zest

Turn on your smoker to smoke to get the fire started; then place the salmon over a cooking rack sprayed with cooking spray

Put the rack on your smoker and close the lid; then smoke for about 4 hours

Remove the fish from the grill; then serve and enjoy warm with crackers!
